Mojo: The term stems from the word “mojado” which means “wet” in Spanish. Mojo is the equivalent to a “sauce” or “marinade” or both. In the Caribbean islands of Cuba and Puerto Rico, “el Mojo” is a garlic sauce consisting of olive oil, vinegar, crushed garlic, salt and pepper. This sauce is used over fried yuca or to brush over pork or other meats while roasting. Fortunately, or unfortunately, in the 1990’s movie Austin Powers, a green liquid called ‘MOJO” was used to describe Austin Power’s libido. In either case, Mojo or MOJO is a powerful sauce.
