Monosodium Glutamate or "msg" is a naturally occurring substance in most foods. Like granular sugar is produced from beet or sugar cane, monosodium glutamate is produced from beets or corn. MSG is unique in that it makes foods taste more like themselves. That is when you add it to beef, it tastes more like beef and when you add it to corn, it tastes more like corn. In the food industry this is called a "food potentiator."
