Paprika is one of the "capsicums" (see cayenne pepper). It is the mildest of the chili peppers and in Mexico they call it "sweet chili" since it imparts no heat or bitter taste. Paprika can be used to "color" and impart taste in foods. It is the key ingredient in preparing "chorizo" and other sausages and in preparing "adobada". Our paprika comes from California and a variety of other locations.
