White Pepper and black pepper are the same thing, but in different stages of growth. Whereas the black pepper kernels were picked while young and immature, the White Pepper kernels are gathered when the berries have dried up and turned yellow. White pepper does offer a different, less bitter and more "smooth" taste to foods. Excellent on French style sauces and dishes, with little or no "heat."
